Ingredients
- 8 oz cream cheese softened
- 3.4 oz package pistachio Jell-O instant pudding mix
- 20 oz can Dole crushed pineapple including juice
- 1 cup miniature marshmallows
- 8 oz container Cool Whip or 1 cup heavy whipping cream whipped to stiff peaks
- prepared pie crust I used my Nilla Wafer Pie Crust, graham cracker crust would also work
Optional Toppings
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 cup chopped pistachios
- maraschino cherries
Instructions
- In a large bowl, beat the cream cheese and pudding mix together until light and fluffy.
- Beat in crushed pineapple including juice.
- Stir in marshmallows.
- Fold in Cool Whip or whipped cream.
- Spoon filling into cooled pie crust and chill for at least two hours.
Optional Toppings
- Beat whipped cream and powdered sugar together until stiff peaks form.
- Pipe on to the top of the pie.
- Add maraschino cherries and sprinkle with chopped pistachios.
Recipe Notes
This is enough filling for a 9.5 inch pie plate. Extras can be enjoyed as a dessert salad.
